Mmmm...cornbread muffins! I do love me some cornbread. I have never been a Jiffy cornbread girl. For some reason it always had some kind of connotation attached to it for me...some kind of cheap thing. But lately I've had a couple boxes on hand, and I tell you, in a pinch, they are darned tasty. When I don't know exactly what to have for dinner...a couple BBQ chicken breasts, salad and cornbread muffins...they certainly do the trick!
